Grilled Zucchini With Garlic and Lemon Butter Baste

  • Score cut side of zucchini halves diagonally about 1/4 inch deep at 1 inch intervals.
  • Melt butter with lemon juice, lemon-pepper seasoning. garlic powder, oregano, and curry powder in a small heavy saucepan. Season with salt and pepper.
  • Brush seasoned butter on cut side of zucchini.
  • Grill until charred (browned) on all sides and just beginning to soften, about 12 minutes.
  • Arrange zucchini on grill, cut side up, and sprinkle with Parmesan cheese, close lid of barbecue and cook until cheese just softens, about 1 minute.

  2. Loved this, it went perfect with our grilled lemon chicken! I did use 2 fresh minced garlic cloves and fresh oregano as we have it in the garden. Cut the recipe in half. Thanks for posting, Sooz . : ) Made for ZWT 6.

Tweaks

  1. Susie, I couldn't find lemon-pepper seasoning here so just used fresh ground pepper instead. I did these under the grill in the oven so it took longer for them to cook.. about 25 minutes, but they were tender and yummy. The addition of curry powder gives a right amount of zing to this, without being overpowering at all. Please see my rating system, a lovely 4 stars for a recipe that I will definiately make again, only next time with a better quality of parmasan cheese (this is a new brand I tried out and I will be going back to my old favourite quick time) The photo's really don't to these justice. Thanks !
