    Directions:

    1. 1
      Cut zucchini in half - lengthwise.
    2. 2
      Mix butter, salt, pepper and parmesan cheese together and spread on each half.
    3. 3
      Put butter side up on grill pan on medium heat for 5 minutes.
    4. 4
      Turn and grill other side for 5 minutes.

      Super simple recipe that results in a side dish that can hold it's own along side just about anything. I grilled these along side a small steak and leftovers worked well for lunch today. Method works well for eggplant too! I'll be using this recipe a lot, thanks for posting it!

      I loved this! It's easy, quick cooking and delicious. I served with my Grilled Bourbon Chicken and rice for a wonderful meal. This will become a staple when my zucchini plants start producing. Thanks for posting!!!
