Got this from my Grandmother and I love it because it reminds me of her.


  1. Cut zucchini in half - lengthwise.
  2. Mix butter, salt, pepper and parmesan cheese together and spread on each half.
  3. Put butter side up on grill pan on medium heat for 5 minutes.
  4. Turn and grill other side for 5 minutes.

Super simple recipe that results in a side dish that can hold it's own along side just about anything. I grilled these along side a small steak and leftovers worked well for lunch today. Method works well for eggplant too! I'll be using this recipe a lot, thanks for posting it!
