      Excellent sandwich, definitely good enough for company. Takes a while to prepare, but worth it. You also get to impress your friends. I have used all kinds of combinations of veggies on this when I don't have egglplant, I've used spinach instead of arugula, and it's always good.

      I haven't made this for awhile, but it is one of my husband's favorite meals. I have the Rosie/Oprah cookbook, too.We usually have it with basil and jalapenos, since my husband loves spicy foods. Now that I've remembered this recipe I will make it soon. My husband will be thrilled! Roxygirl in Colo.
