  1. Combine dressing, parsley and basil in small bowl; cover and chill.
  2. Alternate squash, onions, tomatoes and mushrooms on 8 skewers.
  3. Coat grill rack with cooking spray; place on grill over medium heat.
  4. Place kabobs on rack and cook 15 minutes or until vegetables are tender, turning and basting frequently with dressing mixture.
  5. To serve, place 1/2 cup rice on each plate and top with 2 vegetable kabobs.

Not only pretty, but delicious! I subbed purple onions as that's what I had on hand and grilled the kabobs on an indoor contact grill. I served with sliced melon for a vegetarian lunch. Thank you for sharing the recipe!
