So simple and yet soooo good! I've done this many times. When I don't need a lot, but just want a snack, I take some out of the refrigerator, toast some bread and put it on toast. Great summer appetizer!
Ive used a similar recipe for years....try adding a couple teaspoons of good balsamic vinigar..Try it You will love it
I saw this featured and was craving something light. This was great! I had an old tomato in the fridge, got rid of the insides and chopped it up. Down sized to one person. I had some great bread in the freezer. Everything tastes so fresh. Basil from my garden. Great recipe!!

These are good bruschetta but somehow it needed more garlic taste. So next time I'll rub the garlic on the grilled bread. Thanks 2hot2handle :) Made for Name that ingredient tag game
Great recipe. I used a coarser bread (like a baguette) cut on diagonal and dry toasted in a pan - then added a small amount of grated mozzarella, tomatoes and topped with a bit more mozzarella. Once grilled just turn the heat off - an let sit while finishing the last preparation for dinner. Will have to try the vinegar suggestion on the next batch. Oh, because of abundance - I used cherry tomatoes out of the garden - lots of seeds but just as good.
Was wonderful for our picnic lunch.
