"Italian" - mozzarella cheese, chives, oregano, basil & parsley. "Greek" - feta cheese, chives, oregano, basil & parsley. "Mexican" or spicy - cheddar cheese, jalapeno pepper or a few drops of hot sauce, chives, & cilantro instead of parsley. Your recipe got rave reviews with family and friends. The "bonus"? This was a wonderful way of using up some of the tomatoes in my crisper drawer. The basil was the crowning touch of this dish, as it really contributed a nice flavor boost for the filling. I baked mine (because it's too rainy outside to enjoy grilling), and it worked beautifully. So don't hesitate to try this indoors when the weather isn't cooperating. This was a great lunch on a day when there were NO groceries in our house! I used fresh basil from the garden and crushed Ritz crackers in place of bread crumbs, and the result was an excellent lunch. :)
I reduced the recipe because I used two very small tomatoes from my garden and one medium sized one from the grocery store and grilled them on the upper rack of our grill while other things were cooking. I'm not rating this myself because I'm not overly fond of tomatoes (even though I did taste them) but DH is crazy for tomatoes and enjoyed this recipe very much.
