A low-fat protein source, fish is the best component of a healthy diet, with high nutritional value.
- 2 tablespoons olive oil
- 1 large tomatoes, seeded and cut into cubes
- 300 g salmon (2 slices)
- 1 teaspoon sea salt
- Heat 1 tbsp oil in pan over a medium fire. Stir-fry tomato lightly for about 1 to 2 minutes. Remove and set aside.
- Drip the remaining olive oil over the salmon and grill for 3 minutes on one side. Turn over and grill for another 1 to 2 minutes. Sprinkle with salt, top with stir-fried tomato and serve.
Had some fresh tomatoes from the garden that I used to make this. While we thought this was okay, we also felt it was a little lacking in something. It would be a great recipe to play with.
