This is yummy over fish and any kind of meat! I also like to have it over rice and grains. I think this would be great as a pizza topping! These ingredients are used in the Caribbean, Mexico, Spain and the Southwest, also Hawaii(Western USA).
- 2041.16 g fresh pineapple, peeled, cored, and cut into 1 inch thick rings
- 29.58 ml olive oil
- 2.46 ml salt
- 0.59 ml fresh ground black pepper
- 2 small Hass avocadoes
- 44.37 ml fresh lime juice
- 14.79 ml minced seeded jalapeno pepper (about 1 small pepper)
- 59.14 ml coarsely chopped fresh cilantro leaves
- Heat grill or grill pan to medium hot.
- Brush pineapple rings lightly with oil, and season with salt and pepper.
- Grill until brown and caramelized, about 8 minutes per side, or cook on a grill pan over medium heat for 12 to 15 minutes on each side.
- Cool slightly, and cut into 1/2 inch chunks.
- Transfer to a bowl.
- Halve avocados; remove and discard pit and peel.
- Cut flesh into 1/2-inch chunks; add to pineapple along with lime juice, jalapeño, and cilantro.
- Toss to combine, and serve.

A supreme sidedish. I added one grilled pepper to this recipe.

I really couldn't figure out what to do with this one. It has obviously worked well for some folks, so I spent a lot of time double-checking the instructions that I hadn't missed something, but it just never came together. It's not really a sauce, the components are in chunks. The rather large pineapple pieces, in comparison to the avocado, and the small quantity of jalapeno, made it difficult to use in a way that one could get a flavor-balanced mouthful. The grilled pineapple and the avocado each "mush" a little bit, which makes an attractive presentation difficult. It's not bad tasting, but I think these ingredients could be used more effectively.
yes yes yes. we eat this all the time with pulled pork tacos. i leave the jalepeno out of the salsa because the meat is already sooooo spicy (yum). there are NEVER any leftovers.
