This is so simple, and a great end to a barbecue.
- Slash the tops of the pineapple in a crisscross pattern. Broil until the pineapple turns caramel, but not brown.
- Boil the lemon juice and honey in a saucepan for 2-3 minutes. Remove from heat to cool, and season to taste with pepper. Serve as is, or with a scoop of ice cream. (You could also serve with ricotta or goat cheese).
I cheated and used canned pineapple, the lemon made the pineapple taste very tart but I don't mind the flavour. Thank you JenPo for a simple desert.
