It makes a simple first course.
- Brush the cut side of the peach with oil and grill over medium coals, cut side down until grill marks develop, about 3 to 5 minutes.
- Remove from grill.
- Place on a plate with slices of prosciutto and grilled bread.
Excellent simple treat. I prepared this as an easy dinner for myself on a solo night. Grilling really brings out the sweetness of the peaches and it balances well with the salty prosciutto. I paired this with a crisp glass of Pinot Grigio and enjoyed every bite.
