This is on the net. I came across a site that said that this one was one of Vicki Lawrence's (AKA Mamas Family) favorite dishes.

Ingredients Nutrition

Directions

  1. Cut in half and pit 4 ripe peaches. In about a 1/2 cup of brown sugar, dip the cut sides of the peaches.
  2. On a clean grill sprayed with oil, grill cut side down for 2 minutes, covered. Flip and grill for another 3 to 4 minutes.
  3. Remove from the heat, top each peach with a dollop of the mascarpone mixture in the hole where the pit was. Sprinkle with crushed cookies (I like to use Amaretto Biscotti) and garnish with raspberries.

This was a really nice summer dessert. I think the directions could be a bit more concise. I wasn't sure if the brown sugar listed in the ingredients went into the mascarpone mixture or if it was what is intended to dip the peaches in before grilling. I put 2 T. in the mixtue, and dipped the peaches in the whatever amount I needed to get all of the surfaces covered. I will definitely make this again; maybe even trying a mixed grilled fruit salad with the mascarpone mixture. It was devine!
