This is the marinade I use for the chicken in my chicken lime taquitos, but it is so wonderful plain, I thought I'd post it separately. You can use any chicken pieces you prefer. This is just wonderful!
- 1 teaspoon salt
- 1 teaspoon chili powder
- 1⁄2 teaspoon garlic powder
- 1⁄8 cup oil
- 1⁄4 cup fresh lime juice
- 2 lbs chicken breasts (or other pieces)
- Combine first all ingredients for marinade.
- Marinate chicken in mixture for at least 2 hours.
- Drain chicken well and grill until done.
Incredibly simple, tender and the perfect flavor! We didn't use pieces. We doubled the recipe and butterflied a whole chicken. Will definitely be making this again. It's on our "must-make-this-again" list. Thanks much to the original poster :)
So wonderful! Made this with 2 chicken breasts and halved the recipe. Marinated for just over 2 hours and it tasted so good. I think next time I will cut it up and eat as a taco/burrito.
These turned out soooo good, they were moist and such good flavor done on the Kamado Joe. Loved them with our Mexican kale salad.
