Grilled Marinated Shrimp Skewers

- 907.18 g large raw shrimp (peeled and deveined, leave the tails attached)

MARINADE
- 236.59 ml olive oil
- 59.16-73.94 ml chopped fresh parsley
- 59.14 ml fresh lemon juice (or the juice of 1 lemon)
- 29.58 ml louisinana hot sauce
- 14.79-29.58 ml fresh minced garlic (or to taste)
- 14.79 ml tomato paste
- 14.78 ml dried oregano
- 7.39 ml seasoning salt
- 2.46 ml black pepper
- 0.25 ml cayenne pepper
directions
- In a bowl whisk together all marinade ingredients until well blended (remove 3-4 tablespoons to brush on the shrimp while cooking).
- Pour the marinade into a large resealable plastic bag; add in the shrimp, seal bag and toss to coat the marinade with the shrimp.
- Refrigerate for 2 hours.
- Soak the wooden skewers in cold water 30 minutes before threading.
- Set grill heat to medium-low.
- Thread the shrimp onto the skewers piercing once near the tail and once near the head; discard the marinade.
- Grease the grill grate.
- Cook shrimp for about 5 minutes per side or until opaque, brushing frequently with the reserved marinade.

Absolutely wonderful! Much like a BBQ'd shrimp, but even better! We gobbled these up but since I doubled the recipe we had leftovers, and even they were delicious! Don't know if it's the tomato paste or the hot sauce or the seasoned salt that does it, but this combo definitely works. I can't see us making them any other way from now on - thanks so much for the recipe.
