Grilled Margarita Chicken

  • Combine all ingredients except chicken until blended.
  • Reserve 1/4 cup of marinade.
  • Put in gallon bag and add chicken.
  • Marinate 3-4 hours (in fridge).
  • Grill chicken about 10 minutes each side (until juices run clear), brushing liberally with reserved marinade.

  1. YUM! I added in some juice from some key limes I had left over from Key Lime Margaritas... Also, I saved out the extra marinade and made it into a sauce by adding agave syrup for sweetness, 2-3 T butter, key lime juice (3 limes-they are very small), the zest of 1 key lime, fresh ground pepper and sea salt. I cooked it down so there was some thickness to it, then added about 1-2 T of Tequila before chilling until use...basted and grilled the chicken--YUM!
     
  2. You're right. This did make the chicken extremely tender and juicy. I loved getting souced on margaritas while making the sauce.

<p>I am a mother of 17yr-15yr-12yr old children. I work 3 days a week outside of the home as a pharmacist. Dinner is always a sore subject for me, because there is never time to make it, and the kids don't eat it anyway. My goal this year is to just forget the kids and make what I think my husband and I want, and then they'll have to try new foods out of desperation! <br />I've noticed that I tend to give 4 stars as my top score when reviewing a recipe. Am I waiting for that once in a lifetime, mind altering taste? Or am I just too picky? Oh well.....</p>
