  • 1. Preheat a gas grill to high, or build a fire in a kettle grill. Mesquite-flavored chips would taste great (optional).
  • 2. Slice eggplant in 1/3- to 1/2-inch slices. In a small bowl add together the olive oil, lemon juice, garlic, salt, and thyme. Brush both sides of the eggplant slices with this sauce3. Place eggplant on the preheated grill. If you with to have nice grill lines, turn only once on each side. Grill about 10-15 minutes. Test for tenderness (doneness) by piercing with a fork. Makes 4 to 6 servings.

  1. Nice and simple to prepare. I was grilling thick chicken breasts indirect on my Weber, so placing the eggplant slices directly over the hot coals made perfect use of the space. Be sure and let them get done enough so that they are slightly mushy which brings out the flavor. Off the grill, I added a little salt and fresh ground pepper, and then I tried with a little parmesan instead. I like just the flavor of this grilled eggplant recipe as is, adding the touch of salt and pepper. As to number of servings, way off. It was so delicious I ate half the eggplant in one sitting!
     
  2. Great recipe! It would probably be even better if I had served them with cheese or tomato sauce. They do melt in your mouth with an explosion of flavor! This recipe is super easy too.
