      These are *FABULOUS*!!! I made these as part of the Recipe Cookalong Challenge Game's Sandwich Week and am so glad I did! I used NurseDi's Grilled Eggplant (#30004) for the eggplant. We also added a couple sundried tomatoes and roasted bell peppers and some sundried tomato dressing on these., but the base flavors of the sandwich are terrific. Sourdough seems like a good choice of bread. BF thinks they would be good with fresh tomatoes too (I don't like fresh tomatoes, so that's all him- *lol*). Made these on the George Foreman grill and were fast, easy and mind-bogglingly delicious! Absolutely gourmet/restaurant quality! They were sooooooooo good!

      Oh, this was gooood!!! I broiled the eggplant since I don't own a Foreman grill. I used sourdough bread and broiled it too. Delicious!

      Yuuuuuuum! I threw this together tonight and it is so fantastic! I broiled the eggplant in the oven, put the arugula, mozzarella, eggplant and some simple garlic mayo (mayo with minced garlic and thyme mixed in) on a crusty bun, threw it back in the oven for a few minutes and chowed down on 3 of them! Not exactly the same as the recipe but holy cow to these flavors go together perfectly. I'm looking forward to eating this all week :)

      Great sandwich. I used our homegrown Japanese eggplant and sliced them lengthwise. We also had homegrown arugula. I brushed with the oil and then added some garlic and broiled them. I used hoagie rolls and made my sandwich inside out (used the outside crust as the inside and oiled the inside to grill). The only other change I made was to add a few slices of fresh tomato to each sandwich. Yummy sandwich that I'll make again. It would also be good with fried eggplant and I think provalone or smoked mozzarella would be good. Also, maybe a pesto or a sun dried tomato spread would be a nice addition. But it really is good as it is.

      Really fabulous sandwich!!!! I roasted my sliced eggplant a bit at 400 degrees F with salt, pepper, and garlic powder before I put them on my sandwich to panini. Had the rest of a President's prosciutto panino (roll), that I sliced up for my mozzarella, so I had little bits of prosciutto on my sandwich too (yummmmmmmm!!!) Warming the arugula on the sandwich just brings out incredible flavor!! Will definitely make this again, all who ate it wanted more and more!! Served with raspberry bellinis for a wonderful evening picnic!!! Thank you so much for this recipe!

      Terrific vegetarian panini! I spread White Bean and Roasted Garlic Dip on both slices of sourdough bread for a moister, garlicy sandwich. YUM!

      Hi chia, I must admit that I have made this wonderful sandwich and forgot to review it, I'm sorry. Then, I made it again and this time I changed a few things -- I added a sliced purple onion, roasted red peppers, & basil. All that together made it even more awsome than before! Thanks for giving me the building blocks to work from, Diane :=)

      Simply wonderful sammichs! I also used sour dough. I made exactly as directed and I loved it. This was really easy to make too, and came together really fast, which is always a plus. I'll make this one again, and probably add some onion and maybe some tomato as well. YUMMY!

      I did not think I was an arugula fan but I loved it in this panini! This is a really good sandwich and I can't wait to make it again. I made it on really good sourdough bread.

      I had to make a last minute adjustment to this recipe, because I got home and realised my arugula had gone bad. So, I had to make do with just the eggplant and mozzarella. That was good on its own but I'm sure the arugula would have been a wonderful finishing touch. Some roasted red peppers might be nice too. I don't have a grill, so I did the eggplant and browned the assembled sandwiches in a frying pan. I served with soup for a hearty supper.
