Grilled Cranberry Chicken

Here's what you do with that extra can of whole berry cranberry sauce that you have left over from Thanksgiving! :) Prep time does not include the time to get your grill ready for cooking.

This was fantastic. It's so stormy here right now, so I broiled this in the oven instead of grilled, so I hope that's OK (it sure didn't matter from our end because everyone loved it!) And I'm so mad at myself for not snapping a photo, because it looks divine (I was in a rush though and everyone just wanted to dig in). The chicken really was quite flavorful and moist, and the cranberry glaze was delicious, not too tart and not too overpowering, just a great accompaniment. I'll definitely make this again. Thanks for another "keeper", breezermom!

  1. Dissolve the bouillon cube in the water; combine with the next 6 ingredients in the container of a blender. Cover, process until the sauce is smooth. Put half the sauce in one bowl, half in another. Set aside.
  2. Sprinkle the chicken with salt and pepper. Grill chicken, starting skin side down, over hot coals for 30 minutes, turning every 10 minutes. Baste the chicken with one of the bowls of the sauce.
  3. Grill an additional 30 minutes. Baste every 10 minutes with the sauce, continuing to turn the chicken.
  4. Serve chicken with the reserved sauce. (the one from the bowl that you set aside and haven't used -- do not use the sauce that you have been brushing on the chicken while it cooked).
