Grilled Chipotle Lime Chicken Breasts - or Thighs

Spicy and slightly sweet grilled chicken. This will make your taste bugs WAKE UP and SING! Can even be OAMC- Thanks Tish! If freezing ahead: Put ingredients in a ziploc bag and place in freezer, flattened. To cook from frozen: Thaw in refrigerator. Cook as directed.

  1. Preheat grill to moderate heat for gas or medium indirect heat for charcoal and AWAY from fire, lightly oil or spray COOL cooking rack for easy cleaning.
  2. Mix minced pepper, adobo, lime juice,garlic, oil and pour half into resealable bag. DO NOT add the honey. That comes later. Reserve the rest for basting.
  3. Season chicken with salt and pepper- sometimes we use season salt or lemon pepper for a twist.
  4. Add chicken to bag and allow to marinate for 15 minutes. No need to refrigerate for this short time.
  5. Remove chicken from marinade and place on preheated grill. Discard USED marinade.
  6. Grill chicken about 4-5 minutes then flip over and cook another 4-5 minutes.
  7. Now add the honey to RESERVED marinade and baste chicken. Immediately flip chicken and baste the unbasted side. Grill until lightly browned, about 2 minutes.
  8. Remove from grill and pour any remaining RESERVED sauce on top.
  9. Note: This can be done on an indoor grill as well. Make sure you spray or oil it before heating grill.
  10. OAMC: If freezing ahead: Put ingredients in a ziploc bag and place in freezer, flattened. To cook from frozen: Thaw in refrigerator. Cook as directed above.

Yummy marinade for grilled chicken! Easy to make too. It wasn't as spicy as I thought it might be; next time I'll probably add a little more chipotle. Great recipe - thanks for sharing!

Delicious! We loved the sweet, spicy flavor the marinade gave the chicken. I only used 3 boneless chicken breasts, but made the full amount of the marinade. We like spicy, so I took the advice of some previous reviewers and increased the chiles to 3, the adobo sauce to 2 tsp. and the garlic to 3 cloves. I also added some salt, black pepper, and Tex-Mex seasoning to the marinade. I left the chicken in the marinade for 2 hours. The chicken was juicy and delicious. My family loved it and gave it 2-thumbs up. Thank you for sharing. *Made for 2008 Football Pool*

I did half the recipe but used 1 chipotle chile. And I added more adobo sauce. I marinated overnight and put the honey in the marinade. This was delicious. Thanks Mama. Made for the Babes of ZWT4
