Fantastic! I can't find Chiptole Chilies in Adobo - so I've been using cans of roasted chilies. They were tricky to turn - then I discovered using 2 dinner plates to slide them onto and then flipping them. Worked like a charm! I've been using this recipe as an appetizer and a main dish! I can't wait to try these when I find the right chilies! Thanks for sharing!
The chipotle sauce was Excellent!! to make it healthier, I substituted plain Greek yogurt and some salt for the mayo and served this with Shredded Chicken for Enchiladas, Tostadas, Tacos (#169500). I'll be making this one again and again!
Very good. Everyone enjoyed this although I am not a big fan of the Chipotle flavor so I probably won't make this often.
This was awesome! My husband and I loved it. The sauce definitely made this dish. I have a lot of extra sauce, so we will be having this again tonight!
Whoooo Hoooo, this recipe is spicy. I followed directions exactly. The sauce has a wonderful flavor and even though I'm spice sensitive, I kept going back for more with a burning mouth and tears in my eyes.
my DS and DH enjoyed this, I made this on my indoor grill, the sour cream/mayo mixture is so good, since my DS came over with his fiance I had to double the recipe, served with salsa, I will make this again soon, thanks for sharing CD!

Loved the sauce on these and it was really easy to make too. Just gave all the sauce ingredients a quick wizz in my mini processor and then stirred throught he coriander. Used a BBQ chicken for a quick easy meal.
I LOVE CHIPOTLES!!! I made this with pre-cooked fajita chicken which made the recipe really simple. Instead of grilling the quisadillas, I cooked them in a skillet with a pat of butter. The whole family loved them.
These were very good!!! I followed the recipe exactly other than using leftover chicken. I've never had quesadillas on corn tortillas before...Yummo!!!!
