I have made this twice now and sorry I forgot to review it. Being the recipe of the day ... it reminded me to make it. Once as a sandwich and once as an appetizer.
The first time I used a whole wheat english muffin and I had it for lunch which was great. I prefer scallions (white and green parts) vs a white onion, but otherwise followed the recipe.
The second time I made it as an appetizer. I did change a few things. - I used toasted baguettes for individual bites - I used a red jalapeno along with the scallions - And I added a few green chilies'
It was fantastic. I made it for a small party and not one was left. A great little appetizer, but also a great lunch or snack. I could have this and a bowl of soup for dinner and it would be perfect. A nice easy recipe.

I scaled this back for 2 slices of bread using wholemeal/wholegrain and as I don't care for cilantro I used fresh sweet basil and this made a delicious and filling breakfast. Thank you MarraMamba, made for ZAAR Stars.

A great recipe here, just what I was looking for, quick, fast, items on hand and OH-SO-TASTY! I made for two, and I can't tell you what I loved more. the jalapenos, the cilantro, the cheese? Any and all of it! You won't want to change anything, this is delish snack and so great, so fast. Great and thanks so much! Made for *Everyday is a Holiday* July 2009

We enjoyed this for a tasty lunch. The one thing I'd have changed is the cheese...we thought it would have been better with some cheddar added, or a cheddar/jack combo, instead of the mozzarella. But otherwise great flavors, and it came together easily for a quick lunch.

This was very tasty Marra. I enjoyed it very much. I also cut the recipe down for one. It has the perfect blending of textures and flavors. It was hot, spicy, cheesy and very satisfying. I will be making this for my dh. He is going to love it. Thanks for posting.

Very good! These were so easy to fix, I made them for a late afternoon snack since we'll be eating late tonight. The Beau, aka The Picky Eater, went for seconds and would have had thirds, if there'd been any. Inspired by another reviewer, I wanted to try these with Australian toaster biscuits, very good! Thanks, MarraMamba! I will make these again, it's just too darned easy and tasty.

These were very YUMMY! I used whole wheat english muffins, red onion, pickled jalapenos and tabasco sauce instead of cayenne. I also added one minced garlic clove. I toasted the muffin halves in my toaster before broiling with toppings. Made for Zaar tag.

These were even better than I expected. Great fresh flavor. Just enough kick. I think the topping would make an awesome hot dip at parties. I think I will try that next time. This one is definitely a keeper!!! Thanks MarraMamba!

Everything that you said in the intro! Since I used a red jalapeno, I substituted green onions for the onions for a little color contrast, otherwise made as directed. Thanks for a keeper, Marra.

I used low fat sour cream instead of mayonnaise. The only problem with this recipe is that there wasnt enough.
