Only 5 ingredients and things I almost always have on hand! I think this sounds great and easy to whip up on my next "I don't feel like making dinner but everyone's hungry" day! Recipe source: Bon Appetit (May 2005)
- Place chicken between two sheets of plastic wrap or waxed paper and pound with a meat mallet until chicken is 1/4 inch thichk.
- Drizzle olive oil over chicken and sprinkle with rosemary, salt and pepper. (Can be prepared 4 hours ahead, refrigerated).
- Prepare barbecue (medium high heat).
- Grill chicken until cooked (3-5 minutes per side).
I liked these a lot. Family was a little divided, but you can't beat a recipe that is so easy. I used boneless skinless chicken breasts rather than the thighs, just because that is what was in my freezer. They grilled wonderfully and I really liked the rosemary.
