What a great sandwich. The marinade gave the chicken a distinct and unique flavor. Combined with the pickled veggies, you had a combination that is really different than your everyday sandwich. I doubt it would be a big hit with children, but slightly adventurous adult taste buds would probably really enjoy. I used the broiler for the chicken, about 3 1/2 minutes on each side (I had cut the breasts so they were only half as thick) as long as you don't go too heavy on the mayo, this is a healthy choice as well.

This was a great meal, and something different from what we would normally eat. The fish sauce was definitely stinky, but was definitely what made the marinade. I marinated the chicken & soaked the veggies for probably 3 hours. We had to cook the chicken inside in a pan because it was just too hot out to grill. The crunch of the pickled veggies & the cucumbers, with the flavor of the chicken was just sooooo tasty. My husband loved it and both of us can't wait to try making it again.
