      Yummy! I also put mine in the oven just for health's sake. Oh, and I added some fresh basil and spicy mustard. Very tasty lunch!

      I have often made another recipe that combines chopped spinach with shredded cheese for grilled cheese. It is one of my favorites. Sauteing the spinach with garlic is even better. I skipped cooking the tomatoes before adding them to the sandwich and probably used double the amount of baby spinach. On multi-grain bread, this was fabulous.

      Yum! I followed the recipe with only minor changes: I used vegetarian Old Style Cheddar, eight spinach leaves - next time I'll use more - four small slices of vine-ripened tomatoes, and added cracked black pepper. Instead of buttering the bread I melted some butter in the pan, dropped both bread slices in, topped one slice with the filling, then placed the other slice on top. Will make again!

      This was absolutely fantastic!!!!! :) I baked mine in the oven, using a kaiser roll, Colby cheese, and 8 pieces of spinach. I baked the sandwich open-face, then flipped it over when it came out of the oven. What a treat! It looks like I used a lot of cheese, but it really wasn't that much. I just melted down one side after I flipped it. Thanks for the great recipe. I saved it to my sandwich cookbook!

      I didnt have spinach, so sliced an onion & it was very tasty. Had it with some jalapeno sauce...mmmm. I'll be making this again. ~Little Italy~

      I make mine into quesadillas using tortillas, chopped tomatoes, spinach, mozz. cheese, and garlic powder. I don't have to pre-cook the tomato and spinach.My daughter loves these. Thanks for the idea. Roxygirl

      Delicious! A nice break from the typical grilled cheese. I doubled the spinach since it really cooks down and used dark wheat bread. I'll try this with different cheese as well...provolone, cheddar, it would all be good. Thanks, love4culinary, for a great recipe!

      Be still my heart. I have always loved grilled cheese and tomato sandwiches. This elevates the common gcs to super-star status. I used swiss cheese because that is my fav. Thanks. This is my new guitly pleasure.

      Oooh, this was good! I used about 8 baby spinach leaves, will use even more next time. I like the idea of sauteing the tomato, and the garlic flavor added an extra oomph. I like to add some sliced onion(also sauteed). I put this all on Jewish rye. This was a great light dinner. Thanks Love!

      I am not a veggie-lover, so I was surprised when I took my first bite of this sandwich and loved it! It's a great way to add a serving of vegetables to your diet while still enjoying your favorite comfort food--the good ol' grilled cheese.

      We used honey wheat berry bread and instead of the butter, Italian dressing. With a big bowl of tomato soup, it was a simple, tasty middle of the week dinner. Thanks for posting!

      This is the best! How could you ever go back to a 'plain' grilled cheese after one of these? The spinach has a nice flavor with the garlic powder, and the tomato is perfect with it. I used a whole grain bread, which was very good, but next time I'll try some nice chewy rye bread. Can't wait!

      I have never eaten a grilled cheese other than the plain old way. Well never again will I eat one unless it is this one! I am creative but have never dressed up a grilled cheese and this was great! Thanks!
