Grilled Cajun Chicken

  • Place chicken between parchment paper, plastic wrap or waxed paper and pound to 1/2" thick.
  • Combine the oil and spices in either a sealable plastic bag or a large shallow dish.
  • Add the chicken breasts and marinade for at least 1/2 hour in refrigerator.
  • Preheat grill.
  • Lightly oil grill grates.
  • Drain chicken discarding marinade. Place chicken on hot grill and cook for 6 to 8 minutes on each side, or until juices run clear.

  3. Wow - this is amazing chicken! Like Nimz I had only 3 breasts so used 1/2 cup oil and 1T of each of the spices. I left the chicken in the marinade for 1 1/2 hours, turning after each 1/2 hour. This grilled up so juicy with outstanding flavor. Thanks for sharing this winner!
     
  4. Loved the combination of spices in this. I especially liked the lemon pepper that seemed to have really come out in this. I only used 3 chicken breasts for the two of us and cut the oil way down to 1/2 cup with 1 tablespoons each of the seasonings and it worked perfectly for us. Plan to use one of the breast on pizza tonight. Thanks Mary K.W.

I'm a grandmother who loves having the grandkids around. My son is currently living with me (on a short term basis) so I get to see and spend time with his kids more than I ever had, and that's a great thing. I love trying new recipes and since I have found RecipeZaar, the new dishes have been streaming. Sometimes I think the kids would prefer a little break, but until they speak up, it's something new for them about everytime they visit with us. I don't consider myself a 'cook,' I can only follow recipes. To me a cook is someone who can come up with their own recipes and have success at it (like my daughter).
