Quick appetizer or light lunch. Variations allow you to customize to your taste preferences and keep this in regular rotation in your menus. You could add tomato, onion, any thinly sliced meat.
- 2 avocados, ripe
- 1 teaspoon lime juice
- 2 teaspoons olive oil
- 4 slices bread, thick
- 4 slices parmesan cheese, slice
- 4 ham slices, thin (optional)
- Peel avocado, brush with line juice and olive oil. Slice bread, brush with olive oil. Grill both just long enough to get grill marks. Top bread with parmesan, place ham slice next, then mash avocado on top. Salt to taste. Serve immediately.
Just a fabby recipe!
This was really good!! There is too much snow on the ground to get to my grill and grill pan is packed so I made this in a skillet. I put the avocado in and got a little bit of brown marking s and did the same with the bread. I used deli ham and had a block of parmesan cheese that I grated some slices off and added. Made for a nice light lunch. Made for Best of 2010 Cookbook Tag.
Very good. I've never had a grilled ham sandwich with parmesan cheese, let alone avocado. I love all the ingredients separately...so how could I not love them together. Unfortunately for me I discovered too late that my avocado had gone bad...and since I was afraid eating it would make me sick...I ate the sandwich without it. It was terrific anyway and I will look forward to having it again WITH the avocado! Made for SPRING PAC 2010.
