Ingredients Nutrition

  • 8 slices sourdough bread
  • 2 tablespoons butter, softened
  • 14 apricot preserves or 14 jam
  • 1 cup spinach leaves
  • 34 cup dried apricot
  • 4 ounces crumbled blue cheese

Directions

  1. Brush one side of each bread slice with butter. Spread apricot preserves on 4 of the slices.
  2. Top with spinach, dried apricots and blue cheese. Cover with remaining 4 slices of bread.
  3. Grill 3-4 minutes until golden brown and cheese is melted.
