Very easy to just throw on the grill while you're BBQing. They can be eaten as is or you can add them to salads,rice dishes or sauces. Roasting really brings out the flavor of the tomatoes.
- Brush the tomatoes with olive oil and place directly on the grill rack over hot coals.
- Turn the tomatoes until they are blackened and blistered on all sides.(This will take about 5-7 minutes.).
- Remove the tomatoes from the grill and rub off the skin.
- Season with salt and fresh ground black pepper.
