I love marinated mushrooms, but I've never had any that tasted this light and fresh. I thought I would really miss the vinegar, but the lemon juice filled in nicely. I used all olive oil, and I left these to marinate overnight. I tried a few the first day they were ready, and they were very good, but they just seem to keep getting better the longer they sit.   1. Mix everything together except the paprika, which should be added at the end.

  3. Mix up with mushrooms.
  4. Turn the mushrooms around every few hours - leave overnight in the refrigerator, or at least leave them to marinate for about three hours. (The longer the better.).
  5. Note: olive oil may get hard in the refrigerator. Before serving keep at room temperature for a few minutes and stir for the oil to melt.
