My cousin Greg made this for a quick salad at our last family reunion in Vail, Colorado. It was a hit! Although he is a brewmaster for a brewery in Chicago, I didn't know he also had a way with salads. The things you learn at family reunions! If the dressing is too thick, add two tablespoons water. By the way, the pear gives the dressing its sweetness.
- Mix oil and vinegar.
- Gently stir in blue cheese and pear.
- Pepper as desired.
A very thick and clinging salad dressing. I'm thinking this would work well with whatever your favorite crumbly cheese is. I used half the gorgonzola and would like to try a champagne vinegar next time just to lighten the appearance of the dressing.
I love balsamic vinegar and I love this dressing! The pears added a great sweetness.I used feta since I had it on hand. I would gladly eat this everyday. Roxygirl in Colorado
