Greeninger Date Nut Bread

My Grandmother used to make this and it was fantastic. She would wrap it up in waxed paper and then wrap it again in foil and then she would put it in a shoe box tied up with string and send them as gifts. She sent this to me when I was at sleep away camp! This dense, heavy cake it will last a while if well wrapped. It's great with cream cheese! Note: The original recipe said "1 glass ..." and I have substituted cup for glass in the recipe. Apparently my Grandmother's sisters made this recipe too. I am compiling a family cookbook and 2 of my cousins have sent this to me with their Grandmother's names attached to it. I am giving it their family name since the Grandmas/Aunts would all claim it was theirs! PS-I still have MY Grandma's yellowed handwritten copy.

So easy and so good. My mom loved the date nut bread in a can. She would have flipped over this recipe. I made the bread in my very large Pyrex measuring cup, boiling the water in the cup in the microwave and adding the ingredients to the cup. One 'bowl' quick bread. Baked up beautifully with no problem releasing from pan that was sprayed with Baker's Joy. Dense and nutty and sweet from the dates and raisins. My new Number One quick bread recipe. Thanks, Oolala!

Ingredients Nutrition

  1. Mix the dates, nuts, raisins and sugar together in a large bowl.
  2. Meanwhile, boil 1 cup of water and add 1 teaspoons of baking soda to the boiled water.
  3. Now add this boiled water with the baking soda to the nut mixture and let it sit and cool down in the bowl to room temperature.
  4. Once the nut mixture is at room temperature, add the beaten egg to it and mix well.
  5. Now add the flour and mix thoroughly. The batter will be a brownish color.
  6. Grease baking pan with the oil lightly.
  7. If you want, you can line the bottom of the pan with waxed paper.
  8. Pour the batter in the pan.
  9. Bake at 350 degrees F. for 1 hour.
