Green Tomato Relish

Here is another recipe I found in ARKANSAS FARM FAVORITES.

• Total Time: 11 hrs
• Prep Time: 9 hrs
• Cook Time: 2 hrs

Ingredients:

Yield: 10 QUARTS

• 2 gal.green tomatoes
• 1 medium head cabbage
• 6 green bell peppers
• 6 large onions
• 1/2 cup salt
• 2 cups white vinegar
• 1 cup water
• 1 cup sugar
• 1/2 teaspoon turmeric (optional)
• 1 (1 1/4 ounce) box whole mixed pickling spices

Directions:

1. Chop vegetables and sprinkle with salt. stir well; let set overnight (approximately 8 hours). stir and drain off salt water. mix vinegar, water, sugar, alum and turmeric; pour over chopped vegetables. tie pickling spice in rag and put in mixture. cook slowly for 2 hours, stirring often. put in sterilized, hot jars and seal while hot. process in a boiling water bath for 5 minutes.
