  • This is the mincemeat I use all the time now.
  • Don't peel tomatoes or apples.
  • Core and chop in processor.
  • Cook everything together slowly for 1 1/2 to 2 hours.
  • Bottle in sterilized jars and hot water process for 25 minutes.

  2. Smells terrific, can't wait to use it for tarts at Christmas. I used apple cider vinegar and added 1/2 cup cognac after it was cooked. Update: now December, my kitchen smells lovely, the mincemeat is excellent!! Another update 12/07! I had a jar of this delicious mincemeat from the last batch I made in October 2006 and used it to make my mincemeat tarts this week, it was so good. Keeps well and tastes great!   3. I tried this because I only had six cups of chopped green tomatoes. I thought so few ingredients couldn’t possibly be good. I think it is the best I have ever made. As I always do the first time I try a recipe, I made it exactly like the recipe as written. It will probably be the only one I use now. Soooo delicious. I have a package of pre-made phylo mini-tarts next to a pint jar of mincemeat with a spoon on a dish beside them. I plan to enjoy this several times today. UPDATE: I have since made two more batches. I did a couple of things that made it easier. The first was I put three 3” pieces of lemon rind, an four 3” pieces orange rind and the sugar in my food processor and turned it on for about a minute then added it to the recipe. Cooking mincemeat on the stove means it must be watched. I put mine in the oven at 325 degrees covered for the first 1-1/2 hrs, then took the lid off, stirred it, and cooked it until it was the thickness It needed about another 1-1/2 hours. I am still amazed how good it is.
     
  4. I cut the sugar down to 2 cups, used 3 TBS sunflower oil and 1 TBS walnut oil in place of the margarine. Plus added 1/4 cup boiled cider. It turned out delicious.
     
  5. I made the mincemeat in October and pies for Thanksgiving. It was great. My great grandmother was a chef and made her own mincemeat (the real mincemeat with meat), when my mom tasted this she said "your great grandmother would approve". I added a little rum just before putting it in the jars. Highly reccomended!

Tweaks
