Butter Cracker Green Tomato Casserole

  • Preheat oven to 350 degrees.
  • Chop the tomatoes into smallish pieces.
  • Mix all ingredients except cracker crumbs together and pour into greased casserole dish. I use an 8-inch square.
  • Top with buttered crackers.
  • Bake for 45 minutes. (Check after 30 minutes because the size dish you use will make a difference.). It should be somewhat firm (not soupy) and lightly browned on top.

  1. I love this recipe. When I don't have green tomatoes, I use tomatillos. I add a little lime juice,<br/>minced garlic and buttered Ritz crackers. Sometimes I make ahead, refrigerate and bake later.<br/>Tomatillos are usually available all year

  3. I agree that this is a great way to enjoy green tomatoes without frying them. I made this as directed and I was pleased, but I thout the flavor could have been better. I think I's add some garlic, fresh parsley (or some other herb) and maybe a little cheese next time. Thanx for sharing!
     
  4. There is a flaw with this recipe, you need to DOUBLE it! This was so good, I could have eaten the whole thing myself. My 16 yr. old actually scraped the bottom of the casserole to get what was left of this, he loved it so much, as did hubby. And I had made 3 other vegetable dishes. This was the only one that is completely gone. Now I must confess as I was posting this I realized I forgot to add the eggs! But it was wonderful with out them, and I have a few extra green tomatoes that I will use up and make this again, might even add the eggs this time! :) Definitely a 5 star recipe. Thank you for posting!
     
  5. Very good and wonderfully simple. We used some nice white cheese too, but it is best if you don't use too much or melt it on top as the cracker topping will then make it difficult to serve. This definitally has become one of my favorites now
