- 2 cups vegetable stock
- 3 spring onions, trimmed and sliced
- 2 teaspoons garlic, minced
- 8 ounces peas, frozen
- 1⁄2 cup celery, chopped
- 4 1⁄2 ounces spinach, roughly chopped
- 1⁄2 cup cream
directions
- Place the Stock, Spring Onions and Garlic in a pan. Add Salt and Pepper to this, cover and bring this to boil.
- Boil until the Onions are soft, then add the Peas and Celery and continue to boil on high heat. Once the mixture comes to boil remove the lid.
- After a minute, add Spinach and further boil for 1-minute until the leaves are just tender.
- Next add the Cream and blend immediately. Add the seasoning according to your choice and serve.
