Wow! Even though I read all the wonderful reviews, I really didn't expect that much from this soup. Sure, I thought I'd feel very virtuous eating it, and that was sort of my intention for trying it. I made it exactly as posted, using a stick blender to puree the soup, and then adding spinach, which I did not chop (just a personal preference). This soup was perfectly seasoned and needed not one change! It is divine! I'm sure I will make this often, as I like feeling virtuous, and enjoy eating well while doing so! Thanks for sharing! Yum! This soup is perfect. Great taste and it's filling and healthy. I had a bowl of this soup for a few meal in the week and it was enough for me. I omitted the parsley and used chicken broth. Thanks CaliforniaJan :) Made for PRMR tag game

The outstanding flavor of this soup denies the simplicity and healthfulness of its ingredients. It was easy to make, and I used extra garlic and basil (no parsley as I didn't have any) and left some chunky before stirring in the spinach. This stands beautifully on its own but I enjoyed a slice of grainy bread with it. Thanks so much for a definite keeper! Update: I have since made this many times; last week I served it to a visiting friend who claims to hate greens. Well, he ate at least three bowls of this!!

It is February, Its is cold. It is dreary.I needed green and lots of it, and this fits the bill. So very tasty, this is going to be a fav of mine. Needing green the way I did, I did add 1 green bell pepper finely chopped. I also added the spinach and then pureed it. (only half of it though, love it chunky)I wiwh my camera was working because it truly is beautiful. I garnished my bowl with a dollp of low fat sour cream, sprinkled roasted pumpkin seeds, and added a few drops of red hot sauce. I can't imagine what a resturant would have charged for something as pretty. All this wonderful things said, only one of my four kids would try it (the one who did loved it)I think it was too green.!!!! Thanks Cali Jan!! People you got to try this!
