Green Salad With Pickled Beets, Eggs, and Goat Cheese
"I made this salad specifically to use some of the wonderful beets I pickled in cumin, coriander, and clove. It was a hit at my family Christmas party, and I hope it will be a hit in your home, too!"

- 6 ounces baby mixed salad greens
- 1 cup diced pickled beet (drain well)
- 1 cucumber, thinly sliced
- 3 large hard-boiled eggs, roughly chopped
- 3⁄4 cup crumbled goat cheese
- balsamic vinaigrette (I use Kittencal's Balsamic Vinaigrette made with lemon balsamic vinegar)
directions
- combine lettuce mix, beets, cucumber, eggs, and cheese. Serve with vinaigrette dressing on the side.

<p>I am a professional church musician. I am also a wife and mother. Cooking is my favorite hobby and I always come to food.com first when I'm looking for a new recipe! Indian is my favorite type of cuisine but my cooking is very eclectic (although I am a vegetarian so, no meat on my menu!). I love potluck meals - I think it is a great place to try out a new recipe! After all, if the recipe tanks, you can always deny ownership of the dish! LOL</p>
