Salty and tart ... the perfect condiment for corn chip or crusty bread dipping, or stirring into some veggies, or topping a perfectly grilled chicken breast. Pucker up!
- 1 cup pimento stuffed olive, chopped
- 3⁄4 cup cilantro, minced
- 2 cloves garlic, minced
- 1⁄2 cup freshly squeezed lime juice
- 2 tablespoons olive oil
- Combine all ingredients and allow to sit for at least an hour.
- This doesn't have a long shelf life; eat within a day or so (it's not tough to do!).
I made this to go on top of veggie tacos I was making, but none of it was left at dinner time. I had snacked on it until nothing was left!
