This is my version of a green guacamole. Every time I make it I get rave reviews.
- 2 large avocados
- 1⁄4 cup cilantro, chopped
- 2 garlic cloves, minced
- 1 small tomatoes, chopped
- 1 lime, juiced
- Combine avocado, cilantro, garlic, salt and pepper and mash all together (I like to do this on a cutting board with a potato masher).
- Add tomato and lime juice, stir in gently.
- Refrigerate 30 minutes.
Really great guacamole and so simple to make! My avocados were not too ripe so this came out a little chunkier than anticipated, but still good. I did leave out the cilantro (can't stand the stuff!). Will make again!! Made for PAC Spring 2011.
