Green Chili Frittata

  • Preheat oven to 350 degrees. butter a 9 by 13-inch shallow baking dish. Mix flour and baking powder. Add eggs and butter, blending well. Blend in remaining ingredients. Put mixture in the prepared baking dish and bake for 35 to 45 minutes, or until set. Cut into squares and serve hot.

  1. Made for Photo Tag. Simple no-fuss recipe! I used marble cheese in place of monterey because I did'nt have any and it still turned out gorgeous.A real keeper!
     
  2. This is a very good brunch dish. I got the original recipe from the SF A la Carte Junior League cookbook years and years ago. Glad to see it posted here so I can refer to it quickly. Serve it hot with warmed (Pace) picante sauce, pureed or not, and a bit of sour cream. Goes great with a yummy Bloody Mary with lots of lime and salt!
     
  3. This is simply one of my favorite recipes that I’ve been making some version of for about 40 years! Originally I used a Bisquick box recipe but this is very similar and healthier with the cottage cheese. I’ve not tried it without the butter but that would lighten it further. It’s delicious as is!!

  5. I've used this recipe off and on for the last 3 years. I add meat, or other cooked vegetables. My husband who doesn't like eggs requests this recipe. I don't add the melted butter.

I am a native Californian, born in the Los Angeles area, college in far northern California and now living in southern part of the San Francisco Bay Area. I love kids and animals. I am an active volunteer at my two teenage daughters' high school as well as a Girl Scout leader. We have two guinea pigs, one Dalmatian, one cockatiel, and one quarter-horse to keep us busy. I had a career as a marketing writer before I became a full-time mom and volunteer, but I still write all the time as well as participate in a monthly book club. I stay active and have Jazzercized for over 25 years on a regular basis. I also am trying to do some yoga now and ride horses for fun. I have loved getting involved in the RecipeZaar games and learning how to post the photos. I am currently playing on the Zaar World Tour and it is lots of fun!
