- 2 -3 green chilies, roasted peeled and chopped
- 1 lb low fat grated monterey jack cheese
- 12 eggs
- 1 (16 ounce) container low-fat sour cream
directions
- Layer the chiles with the grated cheese in a buttered or greased 13 x 9 inch baking dish.
- Combine the eggs and sour cream and pour over the top.
- Bake for 30 minutes in a 350 degree oven until it puffs like a soufflé.

Great recipe! I cut it back except for the green chiles, I used a lot more. I covered the entire bottom of the casserole dish (using my roasted hot green Pueblo Chiles) . I used 4 eggs ad 2 heaping tablespoons of sour cream, salt & pepper. Bake time was longer, so I covered with foil as not to brown. Made KILLER soft tacos (with bacon, tomatoes and a little more cheese). Topped with taco sauce. Thanks!
