Green Chile and Potato Pie

- 4 -5 red potatoes, unpeeled (new or small)
- 1 large onion, chopped
- 4 garlic cloves, minced
- 2 tablespoons olive oil
- 1 (4 ounce) can chopped green chilies, drained
- 1 (7 1/4 ounce) jar roasted red peppers, chopped
- 5 large eggs
- 1 cup shredded monterey jack cheese
- 1 cup shredded medium cheddar
- 1 pinch crushed red pepper flakes
- 1⁄4 teaspoon salt
- 1 dash ground black pepper
directions
- Wash and boil potatoes until nearly done - should be firm. When cool, cut into 1/4 inch slices.
- Preheat oven to 375 deg F.
- In medium skillet, saute onion and garlic in oil until soft. Remove from heat and add the chiles and roasted peppers.
- In a large bowl, beat the eggs. Stir in the onion-peppers mix, cheeses, crushed red pepper, salt and pepper.
- Layer half the sliced potatoes in a greased 10" deep-dish pie plate. Spoon over half the egg mixture. Repeat.
- Bake 30-35 minutes or until golden brown and center is set.

My screen name is a diminutive in Lithuanian for bread, so you won't be suprised to learn that I love to bake bread. In recent years I have been baking a lot of sourdough breads and have several starters sitting in my refrigerator. But I like to cook a lot of other things, as well, especially from various cultures. The cat wishes I would concentrate on meat and fish... I joined a few years ago but started posting recipes and participating in forums just recently - I wish I had done so earlier.
