Nice simple side dish from Cooking Light, April 1995.
- 3 1⁄2 lbs green beans
- 2 tablespoons olive oil
- 1⁄2 cup shallot, minced
- 2 tablespoons water
- 1 teaspoon salt
- 1⁄4 teaspoon pepper
- Trim ends from beans, and remove strings. Drop beans into a large stockpot of boiling water; cook 10 minutes or until crisp-tender. Drain.
- Heat oil in stockpot over medium heat. Add shallots; saute‚ 3 minutes or until tender. Add green beans and water; cook 3 minutes or until beans are tender, stirring occasionally. Remove from heat, and stir in salt and pepper.
Lovely simple recipe. The shalotts just give the beans that extra flavor boost - Thanks Lazy-me for a repeat recipe that we will enjoy over & over again
Oh yeah!! This was fabulous. And since dh hates green beans, I got more, lol! Very simple recipe. I will use this repeatedly. Made in honor of Lazyme's dh.
These are delicious! Very simple and I love the shallots with the green beans. I will be making these again. Thanks for sharing and congrats on your football pool win.
