  • Cook green beans in large pot of boiling salted water until crisp tender, about 6 minutes.
  • Drain.
  • Place beans in large bowl of ice water to cool quickly.
  • Drain well.
  • (Can be made one day ahead. Wrap beans in paper towels, then plastic bags, and chill).
  • Heat oil in large pot over medium high heat.
  • Add garlic; stir 30 seconds.
  • Add beans; saute until heated through, about 8 minutes.
  • Add pine nuts and basil; stir 2 minutes.
  • Season with salt and pepper.
  • Makes 12 servings.

  1. this is just too easy and delicious. and quick. i cook my beans 3- 5 minutes on hi in the micro.with aprox 2 tbsp water/lb. they come out crisp tender for this recipe i used 2 lbs, cooked them and then i followed your recipe, so we had lots of nuts and basil. fresh ground pepper tableside, so good, thanks bev

  4. Thanks, Bev for an interesting recipe....love those pine nuts! I substituted some of my home-canned green beans, which allowed me to just start at step #6 (after toasting the pine nuts in oil)- so this really was a VERY quick recipe to prepare. We enjoyed the mixture of flavors - never had a dish like this one....and will likely make it again. Thanks for sharing!
     
  5. Bev, this is wonderful! The basil is a great flavour with the green beans and the pine nuts add a nice little crunch. The only thing I did differently was add about 1 tsp of butter to the olive oil and garlic. Excellent.
