Green Beans With Caramelized Red Onions

"A simple side dish from Bon Appetit. I usually cut back on both the oil and the amount of onions, and use fresh tarragon when I can."

  • Heat 3 tablespoons oil in heavy large skillet over medium-high heat.
  • Add onions; sauté until deep brown, about 35 minutes.
  • Season with salt and pepper.
  • Cook beans in medium pot of boiling salted water until just crisp-tender, about 4 minutes.
  • Drain; rinse under cold water until cool, then pat dry.
  • Whisk remaining 3 tablespoons oil in vinegar and tarragon in large bowl to blend.
  • Add beans and onions and toss to coat.
  • Season with salt and pepper.
  • Serve warm or at room temperature.

  1. Just love the flavor of these green beans!!! I made this recipe with a couple of changes, I used french style canned green beans and sweet onions, but otherwise, followed as written. DH is going to be late tonite for dinner, so I tasted the beans and then took a photo and then added them back to the pan, lol!! Congrats on your win in the football pool and sorry for the late review.
