very tasty as a side dish, or serve it cold as a salad
- 450 g long green beans
- 1 tablespoon olive oil
- 1 medium red onion, finely diced
- 4 slices streaky bacon, diced
- Quickly cook the beans in a pot of boiling water for 3 - 4 minutes or until tender.
- In another small frying pan heat the oil.
- Fry the onion for 5 minutes then add bacon.
- Tip out any excess fat that comes off bacon.
- Toss the beans through the acon and onion mixture.
- Serve immediately.
