Green Beans, New Potatoes With Bacon

This is such great comfort food, and the whole family eats it! Haven’t tried it, but might be good with some balsamic vinegar sprinkled on it. It’s yummo with my horseradish sauce recipe served on the side too. Might be nice to add a few tablespoons of creole seasoning for a change. Think I might try adding in 6 T brown sugar and 6 T apple cider vinegar for a German switch. Perhaps use a couple cups of diced ham. Cornbread makes a nice accompaniment. Be sure to remove any strings from the beans. I don't recall where I got this recipe, but my mother made something similar.

  1. Soak the green beans in cold salt water while sautéing the bacon. When the bacon is golden, add the onions and garlic and cook until transparent. Drain the beans and add them to the bacon and onions. Cover, lower the heat, and cook for 1 hour.
  2. While the beans are cooking, boil the potatoes in salted water until tender. Drain. Cut the potatoes into fourths. After the beans have cooked for 1 hour, add the potatoes, salt, and pepper.

My mother makes something similar to this... Give it a splash of Red Wine Vinegar before serving... Trust me!

I love this combination of ingredients but did not have luck with this recipe. Without any liquid to steam the beans or gauge the temperature of the pot, my beans were still crunchy after an hour. I recommend adding 1/2 cup white wine or chicken broth and maintaining a gentle simmer until the beans are cooked to satisfaction.

Thanks for sharing! This is the stuff I grew up on in AL. I reduced the bacon somewhat (not a big fan) but still it was very bacon-y for me. I'll try it with ham next time, just personal preference.
