- 1 1⁄2 lbs green beans
- 1⁄4 cup olive oil
- 2 anchovy fillets
- 4 garlic cloves
- 1 cup tomatoes
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 2 tablespoons red wine vinegar
- Olive oil in a pan & let heat.
- Put in crushed garlic & anchovy fillets.
- Add green beans & peeled/chopped tomatoes & stir.
- Let simmer for a little bit 5 min then add red wine vinegar and let sit for another 5 minute
- Season with salt and pepper and serve as a side dish or over spinach.
