A simple, straight-forward way to serve green beans as a side dish. This is a good choice for a cold dish at a buffet.
- 1 lb green beans, trimmed, washed, drained, and cut into thirds
- 1 medium onion, chopped
- 2 tomatoes, chopped
- 1 teaspoon salt
- 1⁄3 cup extra virgin olive oil
- 3 1⁄2 teaspoons sugar
- 1⁄2 cup water (or more)
- Place onions and tomatoes in a saucepan. Sprinkle with salt and stir gently. Add green beans, olive oil and sugar; stir. Cover and cook over medium low heat, stirring occasionally, for about 15 minutes until beans are softened. Once the liquid has been absorbed, stir fry a couple of minutes. Add 1/2 cup water, cover, and simmer 40 minutes until beans are tender. The beans will be moist, but not watery.
- Serve cold or room temperature.
This is very good. I served it with baked salmon and baked potato. I used frozen whole green beans and only used 1/2 cup of water. Forgot to add the sugar. Cooked only 15 minutes or so. Turned out perfect!
