Directions

  1. Wash beans.
  2. Drain.
  3. Trim ends and remove strings.
  4. Cut into 2 inch pieces.
  5. Boil for 5 minutes.
  6. Pack into clean hot jars leaving 1 inch head space.
  7. Add salt.
  8. Ladle boiling water over beans-again leaving 1 inch head space.
  9. Remove bubbles.
  10. Wipe rims and adjust 2 piece caps.
  11. Process quarts 25 minutes at 10 pounds pressure.
  12. **If you wish to can in pints use 1/2 t salt and process 20 minutes at 10 pounds pressure.

The par-boil allows for much easier packing into the jars, greatly reducing the overall time to prepare.
